These easy einkorn whole wheat english muffins are an absolute staple in our house. There is nothing like the smell of freshly baked einkorn english muffins. These whole wheat english muffins have a hint of sweetness from the freshly ground einkorn, and are guaranteed to be a family favorite. Adding the step of milling your own flour makes these even better. This may be something that sounds intimidating at first, but I promise, it is very easy and worth the extra step.

What is Einkorn Wheat?

Einkorn is known as the original wheat, growing hundreds of thousands of years ago. Einkorn is the only wheat never hybridized, and is known for its weak gluten, which makes it easier for people to digest. This wheat has a nutty flavor, with the most beautiful yellow coloring. It also has a bit of sweetness, making the best baked goods. This wheat is the perfect alternative if you are trying to eat healthier, and wanting to avoid less preservatives.

I purchase einkorn wheat in bulk through Azure Standard. A purchase can be made monthly and can be delivered right to your door, or a central location where the customers help unload the truck in order to get their order!

How to Mill Einkorn Flour

Milling your flour may sound intimidating, but is actually very simple. I have been using the Mockmill 100 and it works great. A list of their flour mills can be viewed here: https://mockmill.us/product/mockmill-100-stone-grain-mill/

There are different levels on the machine depending on how coarse you want your flour. When I make bread, I will keep my flour mill at a level 1, which makes it very fine. To grind flour, first turn the machine on, then pour in the wheat. Once all of the wheat has made it through the mill, it can be turned off.

What I really love about this recipe is the simplicity of the ingredients and how quickly they come together. No need for a stand mixer. Einkorn has a very low gluten level, therefore, you do not want to over mix this recipe. I use a whisk only, mixing until evenly combined.

Step -by-Step Instructions to Prepare the English Muffins

In a bowl, add the milk, honey, and instant yeast. I always make sure the milk temperature is between 105 and 110 degrees. Once I mix those ingredients, I give it a quick whisk, and then let everything sit for 5 to 10 minutes, watching for foam on top.

The next step is to add the egg, whole milk powder, salt and melted butter.

Last, add the einkorn flour and mix just until combined. The mixture will seem wet, but this is totally fine! Cover with a towel, and let sit at room temperature for an hour.

After an hour, the mixture will have doubled in size, and you can move on to the next step of making the english muffins.

Pre heat a cast iron skillet over medium-low heat. At the same time, I pre heat the oven to 250 degrees. Once the skillet is hot, I add about 1 tbl refined coconut oil. The oil keep the dough from sticking, and will make it easy to flip. I take the dough and try to form an even ball, and then place it on the skillet. Cook each side for about 2-3 minutes. To finish, I put the entire skillet in the oven for 4 minutes. You will need to add more coconut oil each time you add a batch of dough.

How to Store English Muffins

I often make a double batch of these just because they freeze so well. I place a handful in a freezer gallon zip lock bag. If you don’t want to freeze any, they will last for a few days in a bag on the counter, or even in the fridge.

Ingredients

  • 330g Milk
  • 25g Honey
  • 2 tsp Instant yeast
  • 1 Egg
  • 25g Whole Milk Powder
  • 8g Salt
  • 30g Melted Butter
  • 460g Einkorn Whole Wheat Flour

Instructions

  • Preheat the oven to 250 °F
  • Place einkorn whole wheat berries into the flour mill, and process the flour.
  • In a bowl, add the milk, once it has been warmed to 105 and 110 degrees.
  • Add the honey and instant yeast. Give the mixture a quick whisk, and let sit for 5-10 minutes, until the top is foamy.
  • Add the egg, milk powder, salt, and melted butter. Mix together.
  • Add the whole wheat flour, and mix until combined. Do not over mix.
  • Cover with a towel, and sit at room temperature for about an hour. The dough will be doubled in size.
  • Heat a cast iron skillet between medium-low heat. Once heated, add coconut oil to the pan. Form your muffins into balls, and place on the pan.
  • Cook each side for 2 minutes. Finish by transferring to an oven and bake for 4 minutes.
