-Shredded chicken! Stores such as Costco sell entire packages of shredded chicken, making this meal even easier. You can roast an entire chicken, and shred the meat, making this recipe and other meals very easy.
-Boneless chicken thighs
-In place of chicken, any type of meat would work for this. Ground chicken, ground beef, venison, or your favorite sausage would even work. 
-Vegetable or beef broth can be used instead of chicken broth
-If you cannot find the diced tomatoes with green chiles, buy them separately. I would add one can of diced tomato and green chiles. 
-If you don’t have garlic cloves, just add some extra garlic powder. 
-If you are short on the seasonings, start with one packet of taco seasoning, then add more as needed. 
-In place of cream cheese, add greek yogurt instead. It has a similar taste to sour cream but is lower in fat.

Add the remaining ingredients, except the cream cheese. Give everything a good stir to combine.

This recipe can either be cooked on high for 3-4 hours, or on low for 6-8 hours. Once the chicken is fully cooked through, take each breast out, and shred with a fork. Place the chicken back in the crock pot, and then add in the cream cheese. For this recipe, I used a half block of cheese, but an entire block of cream cheese would also work and would only extra flavor. Allow to fully melt, stirring the soup every few minutes to help incorporate.

How to Store

Place leftovers in an airtight container and place in the fridge for 3 days, however this soup could also be placed in a freezer-safe container, and placed in the freezer for up to 6 months. Before serving, allow to thaw, and then warm back up on the stovetop over medium heat.

Ingredients

  • 2 lbs chicken breast
  • 1 onion
  • 8 oz tomato sauce
  • 3 c broth
  • 2 cans diced tomatoes with green chiles
  • 3 garlic cloves
  • 1 tbls lime juice
  • 2 tbsp dry ranch seasoning
  • 1/2 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/4 tsp oregano

Instructions

  • Mix the dry ingredients together in a bowl.
  • In the crock pot, add the chicken.
  • Add the seasoning over the top of the chicken.
  • Add the remaining ingredients, except the cream cheese.
  • Cook on high for 3-4 hours, or on low for 6-8 hours.
  • Once the chicken is fully cooked, take it out and shred it. Place it back in the crock pot
  • Add the cream cheese, and stir around to help melt and get incorporated.
